We frequently have the opportunity to help a fellow GFHBer develop a new recipe, as is the case with this recipe which was adapted from multiple Newcastle clone recipes. The final recipes are not shared with us as often as we would like, which we would post to our website for all to share. So when someone works as closely as Anthony from Texas has on this recipe, we want to share the spoils! While have continued to revise the grain and hops bill of this recipe to get it as close to a Newcastle Brown Ale, and were happy with this first attempt despite it not being quite on the mark. We would call it a "Session" Brown Ale if it were just a little lower in ABV. The flavor according to conventional beer drinkers who were also drinking an actual Newcastle Brown Ale described it as a lighter version than the original, but having all the flavor components there. We look forward to posting the final version of this recipe in the upcoming months...which will be posted as it's own separate recipe.

Ingredients:

  • 10 LBS Pale Millet Malt
  • 32 OZ Biscuit Rice Malt
  • 26 OZ Crystal Rice Malt
  • 4 OZ Munich Millet Malt
  • 6.5 OZ James Brown Rice Malt
  • 2.5 OZ Chocolate Millet Malt
  • 2.5 OZ Gas Hog Rice Malt
  • 2 OZ Fuggles Hops
  • 1 OZ Saaz Hops
  • Mangrove Jack's M36 Yeast

Primary Ferment: 7 days
Secondary Ferment: 7 days

Procedure:

Perform a Single Infusion Mash at 163.4 F for 90 to 120 minutes; or Step Mash at 155-165F for 90 to 120 minutes followed by 140-150F for 90 to 120 minutes with SEBAmyl BAL 100 or Termamyl, and SEBAmyl L enzymes. Use the appropriate amount of rice hulls to ensure circulation and filtration.

Allow to achieve hot break and maintain rolling boil.

2 OZ Fuggles Hops @ 60 min
1 OZ Saaz Hops @ 10 min
Irish Moss & Yeast Nutrients @ 10 min

Mangrove Jack's M36 Yeast
